# Top Tips:

01 -
  • The whole thing comes together in under thirty minutes, leaving your kitchen calm instead of chaos.
  • Halibut stays buttery and tender when you don't overthink it, and these herbs make it taste like you've been cooking all day.
  • It's the kind of meal that feels elegant enough for company but easy enough for a regular Wednesday.
02 -
  • Halibut cooks faster than you think; checking it at the fifteen-minute mark has saved me from overcooked fish more times than I can count.
  • The difference between just-cooked and overdone is about ninety seconds, so set a timer and pay attention.
  • Fresh herbs added after cooking lose their brightness, so mix them into the oil before it hits the heat.
03 -
  • Let the fish sit at room temperature for five minutes before cooking—it'll bake more evenly and stay more tender.
  • Don't waste the herb-infused oil; tear some bread and drag it through what's left in the pan once everything's plated.
