Beef Sausage Skewers Peppers (Printable Version)

Grilled beef sausages with bell peppers deliver a colorful, tasty dish suited for gatherings or quick dinners.

# What You’ll Need:

→ Meats

01 - 14 oz beef sausages, cut into 1-inch pieces

→ Vegetables

02 - 2 large bell peppers (red and yellow), cut into 1-inch pieces
03 - 1 medium red onion, cut into wedges

→ Marinade

04 - 2 tbsp olive oil
05 - 1 tbsp balsamic vinegar
06 - 2 cloves garlic, minced
07 - 1 tsp dried oregano
08 - 1/2 tsp smoked paprika
09 - 1/2 tsp salt
10 - 1/4 tsp freshly ground black pepper

→ Garnish

11 - 2 tbsp chopped fresh parsley (optional)
12 - Lemon wedges, for serving

# Directions:

01 - Whisk together olive oil, balsamic vinegar, minced garlic, dried oregano, smoked paprika, salt, and black pepper in a large mixing bowl until well combined.
02 - Add sausage pieces, bell pepper chunks, and onion wedges to the bowl. Toss thoroughly to coat all pieces evenly. Allow to marinate for 10–15 minutes for optimal flavor absorption.
03 - Heat grill or grill pan to medium-high temperature, approximately 375–400°F.
04 - Thread marinated sausage, bell pepper, and onion pieces onto metal or pre-soaked wooden skewers in alternating pattern. Pack ingredients closely but do not over-compress.
05 - Place skewers on preheated grill. Cook for 12–15 minutes, turning every 3–4 minutes to ensure even cooking. Sausages should reach internal temperature of 160°F and vegetables should be tender with slight charring.
06 - Transfer skewers to serving platter. Sprinkle with fresh parsley if desired and accompany with lemon wedges for squeezing over cooked skewers.

# Top Tips:

01 -
  • The marinade does double duty infusing both meat and vegetables with incredible depth
  • Everything cooks on single skewers so cleanup is practically nonexistent
  • These reheat beautifully for lunch the next day if there are any leftovers
02 -
  • Soak wooden skewers for at least 30 minutes to prevent them from burning on the grill
  • Cut all ingredients to roughly the same size so everything finishes cooking at the same time
  • Resist the urge to overcrowd the skewers or the heat wont circulate properly
03 -
  • Thread ingredients with the same shape facing the same direction for easier turning
  • Leave the ends of skewers empty to give you something to grab onto
