# Directions:

02 - In the same skillet, add additional oil if needed. Sauté the sliced red, yellow, and green bell peppers along with the red onion until softened, approximately 5 minutes.
03 - Stir in the minced garlic and cook for 1 minute until aromatic.
04 - Add chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Stir thoroughly to coat vegetables with spices.
05 - Return the cooked chicken to the skillet. Pour in the chicken broth and lime juice, scraping up any browned bits from the bottom. Stir to combine all ingredients.
06 - Reduce heat to low. Evenly sprinkle shredded Monterey Jack and cheddar cheeses over the chicken and vegetables.
07 - Cover the skillet and let stand for 3 to 5 minutes, until the cheese is melted and bubbling.
