# Top Tips:

01 -
  • You get that cozy pumpkin spice flavor but with enough protein to keep you full for hours
  • It serves six, which means breakfast is basically sorted for most of the week
02 -
  • Overbaking will make the texture dry and spongy, so pull it out when there is still a slight wobble in the center
  • Letting it cool completely before refrigerating prevents condensation from making the top soggy
03 -
  • Room temperature ingredients blend more smoothly, so take the eggs and cottage cheese out about 20 minutes before starting
  • Use fresh spices, as older cinnamon and nutmeg lose their potency quickly and will not give you that robust flavor
