02 - 1 tablespoon cornstarch

→ Sauce

03 - 1/2 cup low-sodium soy sauce
04 - 1/2 cup beef broth
05 - 1/4 cup brown sugar, packed
06 - 1 tablespoon sesame oil
07 - 3 cloves garlic, minced
08 - 1 tablespoon fresh ginger, minced
09 - 1 tablespoon rice vinegar
10 - 1/2 teaspoon crushed red pepper flakes

→ Vegetables

11 - 4 cups broccoli florets

→ Thickener

12 - 2 tablespoons cornstarch
13 - 2 tablespoons cold water

→ Garnish

14 - 1 tablespoon sesame seeds
15 - 2 green onions, sliced

# Directions:

01 - Place sliced beef in a bowl and toss with 1 tablespoon cornstarch until evenly coated.
02 - Whisk together soy sauce, beef broth, brown sugar, sesame oil, garlic, ginger, rice vinegar, and red pepper flakes until sugar dissolves.
03 - Add coated beef to Instant Pot, pour sauce over top, and stir to combine. Seal lid, set valve to Sealing, and cook on high pressure for 10 minutes.
04 - Quick release pressure, open lid, and add broccoli florets. Reseal lid and cook on high pressure for 1 minute. Quick release again.
05 - Mix remaining cornstarch with cold water to form a slurry. Stir into pot, turn on Sauté mode, and cook for 2-3 minutes until sauce thickens and broccoli is tender-crisp.
06 - Transfer to serving plates and sprinkle with sesame seeds and sliced green onions.

# Top Tips:

01 -
  • The beef turns impossibly tender without any fancy techniques or long cooking times
  • You get that glossy restaurant style sauce with barely any effort
  • Everything happens in one pot, meaning less cleanup and more time to actually eat
02 -
  • Dont skip the cornstarch coating on the beef. It protects the meat and keeps it from getting tough during pressure cooking.
  • The second pressure cook for broccoli is just one minute. Any longer and you'll end up with mushy, sad vegetables.
03 -
  • Marinating the beef in the sauce for 30 minutes before cooking adds even more flavor
  • For gluten free, use tamari or coconut aminos instead of soy sauce
  • Double the sauce recipe if you love extra sauce over your rice
