Soft, cheesy breadsticks with rich garlic butter. Ready in 35 minutes, perfect low-carb appetizer.

# What You’ll Need:

→ Cheese Dough

01 - 1 ½ cups shredded mozzarella cheese
02 - 2 oz cream cheese
03 - 1 cup almond flour
04 - 1 large egg
05 - ½ tsp baking powder
06 - ¼ tsp salt

→ Garlic Butter Topping

07 - 3 tbsp unsalted butter, melted
08 - 2 cloves garlic, minced
09 - 1 tbsp chopped fresh parsley
10 - 2 tbsp grated Parmesan cheese

# Directions:

01 - Preheat the oven to 375°F. Line a baking sheet with parchment paper.
02 - In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for 1-2 minutes, stirring every 30 seconds, until melted and smooth.
03 - Add almond flour, baking powder, and salt to the cheese mixture. Mix well.
04 - Add the egg and mix until a soft dough forms using a spatula or your hands. The dough will be sticky.
05 - Place the dough between two sheets of parchment paper. Roll out into a rectangle about ¼ inch thick.
06 - Transfer the dough with the bottom parchment to the baking sheet.
07 - In a small bowl, mix melted butter with minced garlic and parsley.
08 - Brush half of the garlic butter mixture over the dough.
09 - Bake for 15-18 minutes, or until golden brown.
10 - Remove from the oven, brush with remaining garlic butter, and sprinkle with Parmesan cheese if desired. Slice into 8 breadsticks and serve warm.

# Top Tips:

01 -
  • They actually taste like real breadsticks, not some sad diet compromise you have to choke down while pretending to enjoy life
  • The dough comes together in minutes and stretches like real dough thanks to the mozzarella magic
  • You can dip them in marinara or eat them straight from the pan while standing in your kitchen like no ones watching
02 -
  • The dough will be extremely sticky, do not be tempted to add more flour or you will lose the stretchy breadlike texture
  • Work quickly once the cheeses are melted, as the dough becomes harder to handle as it cools
  • These are best eaten the day they're made, though they do reheat surprisingly well in a 350 degree oven for about 5 minutes
03 -
  • If the dough tears while rolling, just press it back together, it's very forgiving
  • Room temperature egg incorporates better than a cold one straight from the fridge
  • A pizza cutter makes the cleanest slices into breadsticks
  • Sprinkle a little extra garlic powder over the top before the final bake for extra garlic kick
