Juicy peaches, watermelon and feta with mint, basil, lime and olive oil for a bright, refreshing summer salad.

# What You’ll Need:

02 - 4 cups watermelon, cubed and seeded

→ Cheese

03 - 3/4 cup feta cheese, crumbled

→ Herbs

04 - 1/4 cup fresh mint leaves, chopped
05 - 1 tbsp fresh basil leaves, torn (optional)

→ Dressing

06 - 2 tbsp extra-virgin olive oil
07 - 1 tbsp freshly squeezed lime juice
08 - 1 tsp honey
09 - Salt and black pepper, to taste

# Directions:

01 - In a large salad bowl, gently arrange the peach slices and watermelon cubes together.
02 - Scatter the crumbled feta and chopped mint over the fruit. Add torn basil leaves if desired.
03 - In a small bowl, whisk together the extra-virgin olive oil, lime juice, honey, salt, and pepper until well blended.
04 - Drizzle the dressing evenly over the salad and toss gently, taking care not to break up the fruit pieces.
05 - Serve immediately at room temperature, or chill for up to 30 minutes before serving.

# Top Tips:

01 -
  • Zero cooking required, which means your kitchen stays cool and you stay sane on hot days.
  • The combination of salty feta with ripe summer fruit sounds unusual until you taste it and wonder where it has been your whole life.
02 -
  • Do not assemble this more than an hour ahead or the watermelon will release all its water and dilute the dressing into nothing.
  • Warm watermelon straight from the sun sounds romantic but tastes flat, so give it at least a brief chill in the refrigerator before cubing.
03 -
  • Salt the peach slices lightly before assembling and let them sit five minutes. It draws out their juices and makes them taste exponentially more like themselves.
  • Use the best olive oil you own because there are only five ingredients in the dressing and every single one is visible on the plate.
