Berry No Bake Cheesecakes (Printable Version)

Creamy no-bake cheesecakes with a crunchy biscuit base and fresh macerated berries. Chill to set.

# What You’ll Need:

→ Biscuit Base

01 - 5.3 ounces graham crackers or digestive biscuits, finely crushed
02 - 4 tablespoons unsalted butter, melted

→ Cheesecake Filling

03 - 10.5 ounces cream cheese, softened
04 - 1/2 cup heavy cream, cold
05 - 2.5 ounces powdered sugar
06 - 1 teaspoon vanilla extract
07 - Zest of 1 lemon (optional)

→ Berry Topping

08 - 7 ounces mixed fresh berries, such as strawberries, blueberries, raspberries
09 - 2 tablespoons granulated sugar
10 - 1 tablespoon fresh lemon juice

# Directions:

01 - Combine crushed biscuits and melted butter in a mixing bowl, stirring until evenly moistened. Divide the mixture among 6 serving glasses or ramekins, pressing gently to form a uniform layer.
02 - In a clean bowl, beat softened cream cheese until smooth. Add powdered sugar, vanilla extract, and lemon zest if used, mixing thoroughly. In another bowl, whip the cold heavy cream with an electric mixer until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Spoon or pipe the filling over the biscuit base in each glass.
03 - Toss mixed fresh berries with granulated sugar and lemon juice in a small bowl. Let sit for 10–15 minutes to draw out juices.
04 - Spoon the marinated berry mixture over the cheesecake filling in each serving glass.
05 - Chill assembled desserts for a minimum of 3 hours, or overnight, in the refrigerator before serving cold.

# Top Tips:

01 -
  • You do not need a single minute of oven time for these, even on the hottest days.
  • There is the perfect mix of creamy, crunchy, and juicy in every spoonful—seriously addictive.
02 -
  • One time I rushed the chilling step, and the cheesecakes slumped sadly—a proper set is worth the wait.
  • Adding lemon zest to the filling was a random experiment and now I can never skip it.
03 -
  • Softening the cream cheese completely before mixing ensures the smoothest texture every time.
  • For truly elegant layers, pipe the cheesecake filling instead of spooning it.
